Chickpea Cucumber Salad Without Onion: Easy Recipe

Chickpea cucumber salad without onion brings together tender chickpeas, crisp cucumber and a bright lemon dressing. Fresh herbs give it flavour without the sharp bite of raw onion, while a little olive oil helps carry the dressing through the bowl.

Use canned chickpeas for a straightforward preparation, or thoroughly cooked and cooled chickpeas if you already have them ready. The main trick is to drain the ingredients well and dress the salad close to serving, rather than letting everything sit in excess liquid.

Ingredients for chickpea cucumber salad without onion

This starting batch uses about 240 g drained cooked chickpeas and 200 g cucumber. It makes approximately two side portions, although your serving size depends on the rest of the meal. Weigh the drained chickpeas rather than assuming every can contains the same amount.

Chickpeas in a bowl
Use canned or thoroughly cooked chickpeas.
  • Chickpeas: 240 g drained, ready-to-eat canned chickpeas, rinsed and drained again. Alternatively, use an equal weight of thoroughly cooked, cooled chickpeas.
  • Cucumber: 200 g, washed and diced. A firm cucumber works best; remove a very watery seed core if necessary.
  • Fresh herbs: 2 tablespoons chopped parsley or a mixture of parsley and mint.
  • Lemon juice: 1 tablespoon to start, with more added only after tasting.
  • Olive oil: 1 tablespoon.
  • Ground cumin: ¼ teaspoon, optional.
  • Black pepper: a small pinch, to taste.
  • Salt: optional, according to taste and dietary needs.

The base recipe contains no onion, spring onion, shallot or garlic. Check seasoning blends for onion powder if avoiding onion is important to you. An onion-free recipe is not automatically low-FODMAP, allergy-safe or suitable for every digestive condition.

If you prefer coriander instead of parsley, swap it according to taste. Lime can replace lemon, but begin with a little and adjust: citrus size and acidity vary. Do not add extra liquid simply to use up a whole fruit.

How to make chickpea cucumber salad without onion

Equipment: a colander, clean chopping board, knife, mixing bowl and small jar or bowl for the dressing. There is no cooking step when using canned chickpeas labelled ready to eat.

1. Drain the chickpeas

Drain and rinse the canned chickpeas, then leave them in the colander while preparing the vegetables. Shake off the remaining water. If they are still very wet, gently blot with clean kitchen paper. Do not substitute hard dried chickpeas directly into the salad.

2. Prepare the cucumber and herbs

Wash fresh produce under running water and dry it. Dice the cucumber into manageable, similar-sized pieces. If the centre is loose and watery, halve the cucumber lengthways and scoop out some of that soft centre before chopping. Finely chop the herbs.

3. Mix the lemon dressing

Combine 1 tablespoon lemon juice, 1 tablespoon olive oil, optional cumin and black pepper. Whisk in a small bowl or shake in a closed jar. Taste with a chickpea or cucumber piece rather than judging the concentrated dressing alone.

4. Toss and adjust

Put the drained chickpeas, cucumber and herbs in a bowl. Add the dressing and toss gently. Taste before adding optional salt or more lemon. Serve promptly, or cover and refrigerate until serving.

For a repeatable chickpea cucumber salad without onion, note the drained chickpea weight and how much dressing you actually enjoy. The quantities above are a starting recipe, not a claim of a tested yield or a precise nutrition calculation.

Keep the salad crisp instead of watery

Whole cucumbers with textured green skins
Choose firm cucumber and dry it after washing.

Cucumber releases liquid as it sits, particularly after seasoning. You cannot prevent every change in texture, but a few practical choices help:

  • Drain before mixing. Water clinging to rinsed chickpeas dilutes the dressing.
  • Dry the produce. Wet herbs and cucumber add unnecessary liquid.
  • Dress close to serving. Keep the dressing separate if preparing ahead.
  • Add tomatoes thoughtfully. They are optional, not part of the base recipe. Remove loose watery pulp if needed and mix them in near serving.
  • Start with less citrus. Add a little more after tasting instead of flooding the bowl.

If liquid collects at the bottom, lift out the salad with a slotted spoon and taste before adding anything else. More seasoning may make a diluted dressing stronger, but it will not remove the water.

Ways to serve chickpea cucumber salad without onion

Serve it beside bread, rice or another familiar staple, or spoon it into a wrap just before eating. It can also accompany a separately prepared egg, tofu, fish or chicken dish, depending on your preferences. Adjust the overall meal rather than treating a side salad as a complete meal for everyone.

For variation, try a little diced pepper or chopped mint. Feta or yogurt changes the base recipe and introduces milk as an allergen. A tahini dressing introduces sesame. Check all additions for your needs rather than assuming an ingredient swap is equivalent.

Make-ahead preparation and safe storage

For better texture, refrigerate the prepared chickpeas, cucumber and dressing in separate covered containers and combine shortly before eating. Use clean utensils and keep ready-to-eat ingredients away from raw meat and its preparation equipment.

The FDA produce-safety guide recommends rinsing produce under running water, including produce that will be peeled, and advises against using soap or detergent. Scrub firm cucumbers with a clean produce brush.

Keep the salad refrigerated at 4°C/40°F or below. Follow the canned-chickpea label and any stricter storage instructions for your ingredients. Plan a small batch for the same day or following day for texture; this is a practical preparation suggestion, not a validated shelf-life guarantee.

Do not leave perishable food unrefrigerated for more than two hours, or one hour in temperatures above 32°C/90°F. For travel, use an insulated bag with cold packs. Lemon dressing does not make a salad safe to leave out all afternoon. See the FDA guidance on safe food handling.

Chickpea cucumber salad without onion: common questions

Can I use dried chickpeas?

Yes, after preparing and cooking them thoroughly according to their packet instructions, then cooling and refrigerating appropriately. This salad method begins with cooked chickpeas and does not supply a dried-bean cooking schedule.

Should I peel the cucumber?

Peeling is optional if the cucumber is suitable to eat with its skin. Wash it before peeling or cutting. You can remove strips of peel if you prefer a softer bite.

Can I leave out the olive oil?

You can try lemon and herbs alone, but the dressing will taste sharper and have a different texture. Start with less lemon. This variation has not been personally tested for this article.

Is the base recipe vegan?

The listed chickpeas, cucumber, herbs, lemon and olive oil are plant-based. Check packaged ingredients and any toppings. Adding dairy yogurt or feta changes that.

Why leave out onion?

It is a flavour preference and a useful alternative for readers who do not enjoy raw onion. It is not a claim that onion is unhealthy or that this recipe suits a prescribed elimination diet.
